Learn about and taste exemplary dishes with a sprinkling of history and culture, featuring a trio-tasting plate including escargot, salad lyonnaise and steak Diane along with wine pairings. Rollie Wesen, Culinary Professor, Chef and Executive Director of the Jacques Pépin Foundation, will demonstrate three classic recipes that exemplify the principal characteristics and techniques of French cuisine. His presentation with Claudine Pépin, President of the Jacques Pépin Foundation, will provide instruction on the dishes and insight into their history along with entertaining stories.
